Two in One Guacamole and Salsa and Fake-Out "Soy-stadas "

I wanted to share with you all one of my go-to easy dinners...Tostadas made with soy crumbles instead of ground beef and my Two in One Salsa and Guacamole. Its a cinch to make and the best part is the soy crumbles! I'm obsessed...they taste almost IDENTICAL to ground beef but have 75% LESS FAT than ground beef, no cholesterol, and pack 9 grams of protein in one serving! They are a great source of protein for vegetarians and perfect when those cravings for a meat taste strike. But also a great way for non-vegetarians to ease into Meatless Mondays or even just to cut some calories. And its not just vegetarians who agree the crumbles taste just like ground beef...my boyfriend was amazed at how much it tasted like meat and my male roommate was so confused when he came home and saw a vegetarian cooking "ground beef" because they even look so much like the real deal. 



And now for my Two in One Guacamole and Salsa. What I love about these recipes is that after making the salsa you are already halfway done making the guacamole. You just add a couple of scoops of the salsa into smashed avocados, some hot sauce, and my secret ingredient and you got yourself two awesome dips to snack on!



My dad has been making this salsa for years and you are going to be amazed at the small amount of ingredients needed. Just chopped tomatoes, red onion, cilantro, and a good amount of salt. That's it! I know it seems too simple to be good, but that's all you really need for an awesome fresh salsa. Make sure to stick it in the refrigerator for a bit after mixing all the ingredients together, that's the secret to getting all the juices to marinate together and become really tasty!
Next step is making the most addicting guacamole ever! Its so easy to make homemade guacamole when you have the salsa made because the tomatoes, onion, and cilantro are all already chopped up and ready for you. Just add some salsa to smashed avocados, a couple dashes of your favorite hot sauce, more salt, and my secret ingredient...Sour Cream! I know it may seem weird to put sour cream in your guacamole, but just one small spoonful of sour cream adds such a nice creaminess to the guacamole and ties it all together.

Once you have your Two in One Guac and Salsa prepared, all you have to do is start cooking your ingredients for the Soy-stadas. Begin by heating up the star ingredient...the soy crumbles with taco seasoning. Tell me that doesn't look just like ground beef taco meat?!


All that's left to do is heat up beans, chop up lettuce, grate some cheese, and assemble it all onto a tostada shell with guacamole, salsa, and sour cream on top and you got yourself a satisfying, high protein vegetarian dinner in less than 15 minutes.
Add a Corona, some good jams, and great company and you got yourself quite the fiesta! 
Two in One Guacamole and Salsa
5-6 small tomatoes chopped
1/2 red onion chopped
1-2 tablespoons minced cilantro
Salt to taste 
3 avocados 
hot sauce to taste 
1 tablespoon sour cream

For salsa: mix tomatoes, onion, cilantro, and salt. Do not be shy with the salt, it adds a lot of necessary flavor to the salsa. Refrigerate for at least 20 minutes to an hour to allow everything to marinate.

For guacamole: Add a couple large spoonfuls of salsa into smashed avocado. Add desired amount of hot sauce, salt, and the sour cream. Mix until thoroughly combined. 
Serve with tortilla chips as a dip or use with soy tostada recipe.

Fake Out "Soy-stadas"
-serves 4 
4 tostada shells
2 cups grated cheddar cheese
1 small head of iceberg lettuce chopped
1 can of refried beans
1/2 package of Taco Seasoning
1 package of soy crumbles (I prefer MorningStar Farms Meal Starters Grillers Recipe Crumbles)
Two in One Guacamole and Salsa and Sour Cream to garnish

Heat soy crumbles over medium heat with taco seasoning and a tablespoon of water until heated through. Heat the beans.

Assemble the tostadas, starting with the tostada shell, a layer of beans, a layer of soy crumbles, cheddar cheese, lettuce and garnish with guacamole, salsa, and sour cream.
